Is there even a wagon any-more?
Living any eating style can be a challenge. An exhausting.. time consuming… sometimes demoralizing… challenge. Living with any allergy or sensitivity or eating requirement turns a simple thing as ” grabbing something on the way home” to an almost impossible task.
Last year at this time I went Sugar Free. Yes. OOBER low GI eating. It worked. I felt healthier than ever, my energy was back, and I managed to shed 45 pounds. A year later I have been quite proud of myself over my success and the fact that, until a month ago, I had only gained 2 pounds back. Yes there were periods where the low GI was LESSSS than ideal and I would tell myself to climb back onto the wagon again but overall I did well.
Then the last month hit. Like childbirth, the memory of how bad things can be fades! In a matter of a few weeks ( and many bags of the lovely Ms. Vicky’s potato chips later ) I am up 5 MORE pounds. Now that doesn’t seem like a lot but what is hitting me the hardest is the flaring of Fibro, the fatigue, and the down right depression that is settling in with every nommed on sugary goodness.
Dieting Doesn’t Work!
Amen to that. An entire society based on the cycles of boom and bust over fad diets, misapplied information, and every changing standards for Healthy Living. Countless meal plans, diet plans, food pyramids and eating regiments are wrapped around interpretations and marketing studies of researchers and doctors. Each version of the story a spin off in another direction that, we all know, will change soon enough as another research grant is given out.
Am I against research and guidelines? Hell no! But they aren’t the whole picture and I am against the blatant creation of fads and celebrity endorsements.
Shut Up and Just Listen!
The one area that is not overly encouraged is Listening to YOUR Body. If we close our eyes and turn off the world for a moment, we can hear what our body is telling us in volumes. It may be telling us that aspartame makes our nerves over active, it may be saying that the third cup of coffee makes our cheeks burn, it may be saying that we have sat at our desk too long. More than likely it is telling us that we haven’t seen enough ( or any ) veggies lately and that sleep is not an option.
So 6 pounds up and a good 20 pounds from where I want to be it is time to get back on the wagon of LISTENING and RESPECTING ME! Not the ME that likes Diet Coke and Potatoe Chips and Turkish Delight by the pound! No the me that knows that moderation includes the sweetness of red peppers and more time with my xbox360 Kinect!
It’s time.
I want it!
I can do this.
It’s for me.

Gluten free, sugar free, dairy free WHIPPED CREAM
This recipe was found on pinterest: Chill a can of coconut milk in the fridge. Take it out and add vanilla and cinnamon and WHIP. You now have a great whipped cream that is gluten, sugar and dairy free!
Ooh – Gluten Free Expo in Vancouver!
What a great website for us “Northerners” who cannot attend the Expo. There are so many exhibitors that I have never heard of. I cannot wait to go to their websites and link to their resources. Keep an eye on this site as Dianne and I both find new sources for gluten free living . . .

Thankfully STUFFED!
And no… I don’t mean the bird!
Last night’s supper was FAButastic! Baby potatoes, stuffing, carrots and turnips, brussel sprouts, stuffing, homemade cranberry jelly, stuffing, and ( of course) TURKEY and Gravy! To wrap it all up to bursting? Pumpkin pie and mincemeat pie! STUFFED!
Along with the many things I am thankful for this year, one is being at a point where a family meal ( such as this one) is safely indulged in to it’s full extent without the worries or fears of getting Glutened! The whole meal… gluten free to the last whip cream sticky crumb!
A thankful Thanksgiving to everyone! Indulge!
Cream Cheese Pun’kin Cake
Sometimes we have time to make things from scratch but NOT having that time shouldn’t remove the good treats from our table! Betty Crocker’s new GF cake mixes are as good as they say AND easy to Dr Up!
With Harvest here and pumpkin pie on every thanksgiving table across the country, I decided to put Betty Crocker to the test and make a harvest cake. Did it turn out? Oh lord yes! Moist… Golden… flavorful… and GONE! Each guest came back for seconds and eyed the one piece reserved for an absent family member with jealous gazes! An easy hit! (Hint… a teenager could make it.)
Cream Cheese Pun’kin Cake
Ingredients:
- 1 pkg Betty Crocker GF yellow cake mix
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/2 cup water
- 1/2 cup butter
- 3 eggs
- 3/4 cup canned pumpkin
Makes:
About 24 standard cupcakes or one 8″x8″ cake.
Instructions:
Preheat oven to 350°F. In large bowl, combine cake mix, cinnamon, and nutmeg. Add water, butter and eggs; beat with electric mixer 2 minutes. Add pumpkin and spices; mix until well blended. Spoon into baking cups or cake pan. Bake according to mix instructions or until toothpick inserted in center comes out clean. Allow to cool in pan on cooling rack for 5-8 minutes. Remove from pan; cool completely.
Frosting
Once cake is cooled completely, I frosted with a quick and easy cream cheese frosting. Betty Crocker’s Whipped Cream Cheese ready to use frosting is too sweet for my tastes so I cut it half and half with real, easy to spread, cream cheese. Sprinkled with some nutmeg and cinnamon, and decorated the cake tray with some fall leaves ( not real ones!).
