Summer Curses!

All winter we long for summer.  We dream and sigh over the warm rays of long off sun and the thought of iced tea in moisture dripping dripping glasses.  The tinkling of soft wind chimed as the vibrant dahlias sway gently in the breeze.

” Mom … my game won’t load…..”

” Mom can Ryan sleep over … again….”  

” Moooommmmmmmm   I am bored…..” , “… hungry…”, “bored…” add infinite.  

Ah yes, the reality of summer with children. For all I complain about school systems and the failings of the systems, I appreciate the systems.  Do I treat it like free day care?  HELL YA!   I respect those parents that home school more than senators!  My children would not survive a semester! So, yes!  I appreciate and cherish the hours my children are in school.

Challenges?

  1. Finding time to keep up on my writings and maintaining a train of thought!  ( Yes, it is all about me! :)   )
  2. Keeping enough food stocked in the house for grazing and meal prep while ensuring they aren’t wheat/sugar laden CRAP! ( Yes, that is my technical term)
  3. Reminding myself that I do LIKE them, ( not just love) these little mini humans.  That fun starts with ME. ( Dys FUN ctional… maybe. But FUN all the same.)

So that will be my focus for the next 48 hours.   The cool rainy weather IDEAL for a baking day.  On the list? Hmmm

C3 – Clean Convenient Cuisine

Gluten allergies are becoming more common, but it is one of the easiest ingredients to stay away from without affecting your overall health or diet. In fact, you are likely to improve your diet, because most foods with gluten are processed.

What exactly is gluten? A mixture of two proteins, present in cereal, grains and wheat, gluten is responsible for the elastic texture of dough. Some people are unable to digest it, hence a gluten allergy (or celiac disease). Luckily, numerous store bought foods now come gluten free. When you have  gluten allergy, the main things to stay away from are wheat, rye and barley, though gluten is often unassumingly present in numerous foods. (If you suspect you might have an intolerance, you can ask for a complete gluten intolerance test at the doctor – or simply eliminate foods with gluten to see if you feel better.)

Foods safe to eat in the “grain” variety are corn, potato, rice, soybeans, arrowroot, carob, buckwheat, millet, and quinoa. Always look at the package label to determine the ingredients. This is a chance to comprise your diet full of whole, natural foods with lots of fresh veggies, proteins, healthy grains and fruits.

However, if you do have this allergy and you occasionally want to bake something sweet, there are many wonderful options (entire shops and blogs are now dedicated to gluten free lifestyles). Below is a delicious, gluten free recipe to make on those days when you want something sweet but healthy!

The Results are In!

The cookies were barely cool when my family started asking if they could try these. They have to be one of the prettiest cookies I have made in forever!  After supper my husband was the first to snatch one up and promptly went back for another, followed by both kids and then myself.  These are amazing!!!  Not only are they super fast and easy, they taste great.  They are crunchy on the outside and soft and chewy on the inside, which is what I personally look  for in a cookie.  From start to finish including cooling time these cookies took approximately 25 minutes and made 2 dozen.  The only thing I will do next time is use creamy peanut butter instead of crunchy. And trust me there will be a next time!  Hope you enjoy these as much as we do. Happy eating!

They taste as good as they look!

Flourless Peanut Butter and Chocolate Chip Cookies

I found this recipe while looking for some quick easy cookies to whip together for the family.  Not only are they quick and easy but they have no flour!  I have a batch in the oven as I type and they smell amazing. I will let you all know how the verdict on the end product when they are done and have been sampled by the house!

  • 1 cup super chunky peanut butter
  • 1 cup (packed) golden brown sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1 cup miniature semisweet chocolate chips (about 6 ounces)

Preheat oven to 350°F. Mix first 5 ingredients in medium bowl. Mix in chocolate chips. Using moistened hands, form generous 1 tablespoon dough for each cookie into ball. Arrange on 2 ungreased baking sheets, spacing 2 inches apart.

Bake cookies until puffed, golden on bottom and still soft to touch in center, about 12 minutes. Cool on sheets 5 minutes. Transfer to racks; cool completely.
