Wheat Free and Famished

In Calgary we had mastered the art of living Gluten/wheat free.  We had our home and our cupboards and our recipe books all at the ready and did mighty well!  ( The scale shows how well we were living!)  Now we are in a small town in Northern BC and.. well..  I am HUNGRY and hearing the siren’s call of a perogie pizza from Boston Pizza!

Refocus!
Savalas Restaurant ( owned by Rebecca and Craig formerly of Teja’s) is going to be our haven. More than 3/4′s of their menu is ALREADY Celiac Friendly!   Sauces are made from scratch and the couple are amazing people who are eager to help meet the needs of this growing group of people and are committed enough to help do research to do so.  We are currently discussing and testing the viability of me adding some desserts to their menu including Toasted Coconut Cake, Rich Chocolate Cake and an Apple Cake with hot Caramel sauce.  In the mean time, they are looking to add Rice Vermicilli to their substitution list for pastas and swapping out their soya sauce in their stir frys to meet the celiac requirements.

The Baking Cupboard at mom’s place is getting set up again in the breakfast nook.  ( oh ya…  ps. Mom I am setting up a baking shelf in the breakfast nook  GRIN)  This will enable us to not have to dig into boxes and/or invest moneys into foods we have already.  Zanthum gum is expensive ( $15 for a yeast jar sized amount) and many of the other supplies are daunting when you are just getting set up.  In the next week though we will be looking at getting our staples going again.  Breads, loaves and cookies will be able to fill the kids lunch boxes.

Family Routines/Calendars are the final step in knowing who is where and when to cook for them.  This will help us find the flow of who can do what when and what is needed.   Making bread on painting day is not a good idea but we can make this work.

Wheat Free and focused!

Steeped in Flavorful Helpfulness

Steeps is a great Tea Shop on 17th ave sw.  The last time I was there I was THRILLED by the Simple Simon Gluten Free Lemon Crumble and their Apple one looked divine!  I stepped into their shop yesterday with hopeful salivations.

Denied.

Simple Simon, as it was explained to me, is currently reconsidering his Gluten Free line and is questioning it’s viability.   This saddens me. I spent a few stolen moments with the operator on some quick resources to fill that hole in her suppliers.  (Sugar and Spice in Airdrie being the first to fall off my lips.  Her Banana Bread is appearing in more and more shops and is well deserving of it’s price!  MMMMMMMM)

I recognize that it is difficult for coffee/tea shops to carry gluten free options as their shelf life and cost make them a challenge and a huge potential in overhead/write-off costs.  As a business owner it is a huge struggle to be able to offer a product to a portion of your customers.

Why only a portion?  Because sadly Gluten Free Goods has obtained a stigma of also being Flavor Free Goods.  This has been rightfully earned as the Pioneers of Gluten Free Products just battled to find something that could be eaten and often had to sacrifice taste to make it so.  ( Yes, wheat is still a very nummy thing and does bring out flavors.)  The Pioneers, companies such as Celimix and Kinnikinnick, have done a great job at bringing basic foods and mixes back into every day homes.  Regrettably, they are still NOT comparable to a piece of Cheese Cake Cafe’s seven layer chocolate cakes!

So how can a business bring in MARKETABLE and Reasonably Priced goods into their businesses when private homes even struggle?  I would initially pass on some suggestions that I also offer to friends and families:

1) Keep a Loaf of Wheat Free Bread in the Freezer.  What would I recommend with PRICE and TASTE in consideration?  Kinnikinnick’s tapioca bread or brown bread ( which is currently being used by Chianti’s Restaurant in NE Calgary with their vinegar and oil! mmmmmm) work well as a lightly toasted sandwich.  Pastrami on their brown bread….ooooo now that is good.

2) Healthier Luncheon Meats  – Deli meats are sneaky but grocers are getting wise to the market!  More and more everyday meats are being swapped out for products that don’t use wheat filler. Black Forest Hams, pastrami’s and Roast Turkey meats are just a few that are available in completely Celiac friendly forms and for insignificant price differences IF any!

3) Fresh Veggies are Gluten Free ( duh right?).  A good rule of thumb I heard was ” If it came straight from mother nature it doesn’t need a Food Information Table on It”.  Oranges contain 100% oranges.   Carrots contain 100% Carrots.   A wonderful thing to offer is to swap out a side dish of unknown content with some simple cut veggies and/or fruit.  The offer is often seen as very considerate and openly welcomed.

4) Watch what it’s cooked WITH!!!!   Please use a separate toaster for our breads though!  A walmart $20 special is fine.  Clearly labeled NO WHEAT!!!!!  Even crumbs are enough to set off an allergy.  Are chicken fingers deep fried in the same oil as your french fries?  Is the sandwich press used for wheat breads and rice?  Consider a smaller “home use” deep fat frier for special orders or parchment paper for presses and baking sheets.

5) ASK US!    We are so used to dealing with the what we can and what we can’t that we are pretty good at being creative.  Any chance that we can enjoy a meal out with friends in a public setting AND get to eat along with them and we are THRILLED.  What does this mean? Bigger tips and willing to pay the extra few bucks! NOT to mention fabulous word of mouth!

That being said I still carry Wheat Free soy sauce in my purse for Sushi impulses and recognize that sometimes those dreaded green salads are the only options! I still appreciate family, friends AND restaurants who are willing to make that extra strep to help encourage me to come back again… and bring friends!

Bikes and Bread

Saturday dawned silent and warm.   Yes.  Silent.  The bobcats were quiet, off doing things in other areas of the compound.   The Kids were off with their father on their third camping trip of the year.  The world.. was… silent.

Puttered around for a bit then fired up the motorcycle.  How else to spend such a glorious day than on the bike in search of bread!

You heard right.  Catalytic and I headed out to Cochrane and the Gf Patisserie to try out their Gluten Free bread. I prayed I would not, once again, be disappointed and only find the standard grainy dry rice bread alternatives that are available in other locations.

I was NOT disappointed!   The bakery smelt like heaven!  The bread on the shelves ranged from white, raisin into foccaccia and more!  I settled for a loaf of white, loaf of raisin and two chocolate brownies to eat right away.

They were amazing!  Well worth the glorious trip for the amazing bread!

For the first time in over a year…  my boys had PB and J sandwiches for supper and licked their fingers clean!

Wheat Free Banana Bread at Weeds Cafe!!!!

Dear Owner of SUGAR AND SPICE – Allergy Free Cuisine,

Yesterday I was stunned and THRILLED to enter Weeds Cafe and find an entire basket of foods I could eat!  I understand this is YOUR doing!   THANK YOU!

In a world where Wheat is NOT my Friend, and yes is everywhere, even outings such as going for coffee have become… "less".   Friends do their best to find locations that are Wheat Free Friendly but they are few and far between.  I have come to resign myself to just a nice cup of coffee and skipping the snack.

But there… in a halo of golden light.. was Banana Bread with an amazing sign above it saying " Gluten Free".  Really?  It wasn’t a joke?  The gentleman behind the counter said "Yes, rice flour."  I literally clapped my hands and grabbed a piece.  It was at that point he commented though  " But possibly not for long…."   I was horrified.  The rest of his words were lost in the hiss of the espresso machine and I whipped to my lap top to find your company and figure out the truth.

I understand the difficulty of this expensive but much needed market.  If there is a way for businesses to work together I would love to brainstorm.  Restaurants such as Tasty Menu on 17th, your Sugar and Spice and Lakeview Bakery where each business can specialize in their custom area of this challenging food limitations and yet thrive and reach new individuals who are GREATLY in need of the liberating options of eating in public again!  Heck… EATING again!

All that aside, Thank you for making my Saturday Afternoon  AMAZING.  My coffee was average but the ability to indulge in such a wonderful treat was FANTASTIC.  You made me not only smile but beam!!!
