Gates Night

Gates Night has come to a close and all is calm and well.  After all these years I still hold my breath until the midnight hour passes.  I guess the trainings of our youth are hard to break.

The quarantine has not prevented the seasonal merriment within the house.  Yesterday was home made bread, cinnamon raisin loaf and flaky delicious apple pie.  All of which was topped off with a delightful treat of a Home Made Root Veggie Pie by Madeileen.  It was delicious but not an every day venture, I hear.  Much like a fabulous chicken pot pie but … ummm.. missing the chicken

Today was more prep for tomorrow.  Alien cupcakes and pumpkin carving (really not The Baby’s gig this year) and rounding out the afternoon with a pizza supper.  Afterwards the Unleashed made us his dessert/suprise.  Worms in dirt.   We watched Young Frankenstein as a family movie and everyone TRIED to tuck into bed early in spite of the high energies for tomorrow.

Halloween… so very much like Christmas enthusiasm in our house.   Makes me want to fire up the hearth and hang blackened and deformed stockings .

Chocolate Raspberry Sin

Chocolate Cake Mix
Follow instructions for baking.
Replace the: 2/3 cup of water
1/3 cup of oil
with :    2/3 cup of Pomegranate/Apple sauce
1/3 cup of water

Bake in an 8″ x 8″ inch pan according to instructions on box ( you will need to add more bake time for this!).   Remove from oven ( and pan) allow to cool.

Slice into 2″ squares.  Slice open. Top each piece with chocolate frosting, fresh raspberries and drizzle with chocolate syrup. garnish with a sprig of mint.

Supreme Chocolate Cake Mix
Follow instructions for baking.
Replace the: 3/4 cup of water
                  1/4 cup of oil
with :    3/4 cup of marmalade
            1/4 cup of oil
            1 tsp of ground ginger
           
 
Bake in an 8" x 8" inch pan according to instructions on box ( you will need to add more bake time for this!).   Remove from oven ( and pan) allow to cool.
 
Serve topped with candied citrus rinds, fresh cream ( or whipped cream) and shaved chocolate.   This is heavy and rich like a brownie with the richness of ginger.
 

Toasted Coconut Cake

White Celimix Cake Mix
Follow instructions for baking.
Replace the: 3/4 cup of water
                  1/4 cup of oil
with :    3/4 cup of Mayonaisse ( yes you heard me!)
            1/4 cup of oil
            3/4 cup of Med shredded cocount
 
Bake in an 8" x 8" inch pan according to instructions on box.   Remove from oven ( and pan) allow to cool.
 
Serve topped with whipped cream, oven toasted coconut ( for decoration and a bit more flavor) and a drizzle of maple syrup.

Apple Cake ( with brandy Caramel Sauce )

White Celimix cake mix
Follow instructions for baking.
Replace the: 3/4 cup of water
                  1/4 cup of oil
 
with :  3/4 cup of apple sauce
          1/4 cup of oil
          2 tsp of apple pie spice  ( blend of nutmeg, allspice, cloves and cinnamon)
 
Pour batter into a round spring form pan and arrange in a circular pattern on the top – thinly sliced apples.  Sprinkle the top lightly with cinnamon and bake according to recipie. 
 
This can be served warm from the oven or cooled…   BEST WAY?
 
On the stove top warm up your favorite caramel sauce and add a GENEROUS dose of your favorite brandy!!!   Arrange cake slices on individual plates, a mound of rich pecan/caramel ice cream or maple walnut ice cream and top with the warm Brandy sauce!
