Turning Six? SWEETLY!
Gluten Free and Birthday Parties are one of the big challenges due to the BIRTHDAY CAKE! So how do you keep a little guy’s birthday party ‘ normal’ and safe?
NOT a problem!
Chicken fingers and Whip Cream covered Desserts! The birthday boy and guests devoured and laughed through the entire evening! ” Oh mom.. It was so awesome!” was all I needed to hear to know it was a success.

Gluten Free Cake Balls

I love all things cake, which is why I’m going to share a recipe for my absolute favorite cake treat…Gluten Free Cake Balls! (or for the more refined of you in the audience today, Cake Truffles.) I make these little delights for parties, and no one ever guesses that they are gluten free.
Cake balls are bite-size balls of moist cake blended with rich frosting (or pie filling), surrounded in a deliciously beautiful confectionery coating. An exciting twist on cupcakes and a sophisticated alternative to traditional desserts.
Cake balls can be made in a huge variety of flavors, but for the sake of this post I’m going with Black Forest Cake Balls. Yummmm.
What You’ll Need:
- Gluten Free Cake Mix (I used Kinninnick’s Chocolate Cake Mix)
- 1 can of cherry pie filling (or substitute icing or other filling of your choice)
- Chocolate – I used semi-sweetened Baker’s Chocolate, but anything that can be melted down works. Just make sure it’s gluten free – read the labels! (amount…? Lots.)
- Some type of double-boiler system so you can keep your chocolate melted without it clumping up. (I used the ceramic part of my fondue set inside of a regular pot.)
Directions:
- Prepare the cake mix according to package directions using any of the recommended pan sizes.
- Allow cake to cool at least 30 min. Do not mix the pie filling/frosting while HOT!
- Crumble while warm into a large bowl, and stir in the pie filling or frosting of choice until well blended.
- Use a small scoop (I use my hands, but to each their own) to form small balls of the chocolate cake mixture. Small is the key word here. You want them to be, literally, bite size. Too big and the end product will seem too rich. Place your formed balls onto parchment or wax paper covered cookie sheets.
- Put this mixture in the refrigerator, covered, for at least 3 hours but I did it overnight and it was perfect.
- Melt chocolate coating in a glass bowl in the microwave, or in a metal (or ceramic) bowl over a pan of simmering water, stirring occasionally until smooth.
- Dip the balls in chocolate using a toothpick, fork, or spoon to hold them. This will take practice and I find that everyone has their own dipping style. I use a fork to hold the ball, and a spoon to roll and pour the chocolate over it.
- Place on parchment paper to set. (on the counter is fine, but I set mine in the freezer as I usually make mine several days in advance for parties)
- ENJOY!!!
Note:The types and flavors of cakes and filling/icing/coatings can be substituted for anything. Your imagination is your only limitation! I’d love to hear what flavors YOU come up with!!

Birthday Cake Details
The Matriach posted about the cakes from yesterday and I am adding the techi part to that.
“Tha Cake” was my first attempt at using the Kinnikinnick Angel food Cake Mix.
Factors impacting the turnout; did not use the Bundt pan, used two round pans, age of the mix ( have been meaning to get around to this for a while) and my impatience with making egg whites ” soft peaks”. I was feeling very rushed to make this cake on the day of the party so I am not willing to blame the cake mix itself.
The reactions; I had two slices, the Matriarch enjoyed a rather goodly sized portion, and my boys couldn’t wait to finish the last of the cake for breakfast. Overall it got a 3 out of 5 rating. It was ” good for being wheat free”. THAT is never my aim so I will be trying it again.
Birthday cake drama
Ok so the most important thing for a 4 year old is that Mom’s birthday MUST HAVE A CAKE AND PRESENTS! Bringing Mom a bottle of wine for example is not a GIFT as far as a 4 year old is concerned!!! Where were the balloons? Where were the presents with pretty wrap and bows?
Well the gifts we bombed at, but the cake – oh the cakes! Yes 2 of them. With 5 of the 12 members of the family wheat intolerant, 2 cakes were required!
The wheat free cake was wheat and dairy free. A white cake with a nutriwhip frosting (lactose free and casein free ) and lemon filling. It looked like a perfect cloud! The flowers on the top were amazing for an April splash of color. Unfortunately, the white cake was not the very best we can do. For some reason this time it was almost powdery tasting. The texture was almost sponge cake style. The flavour was awesome!
So for the 4 year old, Mom got 2 cakes with candles and a Happy Birthday song. But, failures we are – no gifts. LOL
Mmmmm… Johnny Cake.
Hey everybody, this is my second post and well I have been forgetting to post lately and well… *YAWN*… Wow that was a surprising ‘well’. Its the end of Spring Break and I was up late some of the nights but never mind about that.
Today my mom gave me a awesome bread, I asked what it was and all my mom said was it is called Johnny Cake or to some people known as Corn Bread. She served it like a square of fudge with butter a Maple Syrup and it was the best bread/cake I have ever had! Then she started telling me that my Grandpa, he always used to have it for a after school snack and when he eats it now he feels like a kid again. I thought it was kind of funny, later this night when I got back from going out with my Grandma there was only 1 piece left of Johnny Cake. I went up to my mom and said, “someone has been eating the Johnny cake!” All she replied with was ” Really? I never noticed,” I kinda knew she was being sarcastic.
Uh oh, its time for me to go to bed now.

Betty Crocker Got Smarter
I have to say I have become quite skeptical with the product availability of all these “fantastic gluten free products’ that have started to seep onto the market. This one though has me TRULY hopeful!
REALLY!! Reading fine print… I phoned the General Mills Customer Service number in the states and they provided me with the Canadian number 1(800)767-5350. I have to say, I REALLY liked the US customer service line. The were NONE of the automated ‘ press 9 for this in swaheeli’ recordings. Straight to a young and friendly voice!
My enthusiasm faded when I hit the Canadian ” customer service” line.
I regret to inform CANADIANS that this product is not available in Canada. * sighs*
Gates Night
Gates Night has come to a close and all is calm and well. After all these years I still hold my breath until the midnight hour passes. I guess the trainings of our youth are hard to break.
The quarantine has not prevented the seasonal merriment within the house. Yesterday was home made bread, cinnamon raisin loaf and flaky delicious apple pie. All of which was topped off with a delightful treat of a Home Made Root Veggie Pie by Madeileen. It was delicious but not an every day venture, I hear. Much like a fabulous chicken pot pie but … ummm.. missing the chicken

Today was more prep for tomorrow. Alien cupcakes and pumpkin carving (really not The Baby’s gig this year) and rounding out the afternoon with a pizza supper. Afterwards the Unleashed made us his dessert/suprise. Worms in dirt. We watched Young Frankenstein as a family movie and everyone TRIED to tuck into bed early in spite of the high energies for tomorrow.

Halloween… so very much like Christmas enthusiasm in our house. Makes me want to fire up the hearth and hang blackened and deformed stockings .
