Gluten allergies are becoming more common, but it is one of the easiest ingredients to stay away from without affecting your overall health or diet. In fact, you are likely to improve your diet, because most foods with gluten are processed.
What exactly is gluten? A mixture of two proteins, present in cereal, grains and wheat, gluten is responsible for the elastic texture of dough. Some people are unable to digest it, hence a gluten allergy (or celiac disease). Luckily, numerous store bought foods now come gluten free. When you have gluten allergy, the main things to stay away from are wheat, rye and barley, though gluten is often unassumingly present in numerous foods. (If you suspect you might have an intolerance, you can ask for a complete gluten intolerance test at the doctor – or simply eliminate foods with gluten to see if you feel better.)
Foods safe to eat in the “grain” variety are corn, potato, rice, soybeans, arrowroot, carob, buckwheat, millet, and quinoa. Always look at the package label to determine the ingredients. This is a chance to comprise your diet full of whole, natural foods with lots of fresh veggies, proteins, healthy grains and fruits.
However, if you do have this allergy and you occasionally want to bake something sweet, there are many wonderful options (entire shops and blogs are now dedicated to gluten free lifestyles). Below is a delicious, gluten free recipe to make on those days when you want something sweet but healthy!

Birds, Toads and Toast!
We have all come to accept that store bought Gluten Free Bread needs a little " help" to make them exciting. Regardless of the bread, Bird's Nests were always fun for me growing up and now my boys can have a more MANLY breakfast.
Toads in a Hole!
Ingredients
6 slices of GF bread
2 tablespoons butter, softened
6 eggs
6 slices Cheddar cheese
Directions
1.Preheat a large skillet to a high heat.
2.With a small biscuit cutter remove centers from bread. Butter slices on one side only. Grill bread until lightly toasted.
3.Crack an egg into each bread hole (be careful not to break the yolk). Season with salt and pepper to taste.
4. Lay 1 slice of cheese on each egg and then the bread rounds. Cook until eggs are cooked to your desired consistency.

Hamburger And Potato Cupcakes? Why Not?

Yes, hamburger and potato cupcakes.
It is a wonderful combination of potato and burger. Well seasoned burger and everything nicely cooked, it is just wonderful! On your first bite (hopefully with cutlery) of the combination is the a magical burst of flavors!

Rice Crispie Traditions
Rice Krispie Squares have been around since the dawn of time and have filled more lunch boxes, Christmas dainty trays and Tupperware containers than any other snack! Balls, squares and slabs of every shape and size are written out in family recipe books all across the continent. So, when our local Save on Foods put their Nature's Path Crispy Rice (750g bag for $6.99) on sale I grabbed two.
Standard rice crispies (not just Kelloggs) use malted barley as a flavor enhancer. Bummer. That also means those boxes of pre-made Rice Treat Squares also contain the hidden devil! So… from scratch it is.
In honor of that and for my own purposes ( I notoriously lose the rice treat squares recipe) the basic…
Crispie Rice Treats!
3 tablespoons butter or margarine
4 cups miniature marshmallows or 1 package (10 oz., about 40) regular marshmallows
6 cups Crispy Rice Cereal
(Have all Ingredients Pre Measured!)
1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Keep your eye on this! It happens quite quick! Remove from heat.
2. Add Crispy Rice cereal. Stir until well coated.
3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray or pre-prepped with parchment paper. Cool. Cut into squares.
Store in sealed container.
