The Results are In!
The cookies were barely cool when my family started asking if they could try these. They have to be one of the prettiest cookies I have made in forever! After supper my husband was the first to snatch one up and promptly went back for another, followed by both kids and then myself. These are amazing!!! Not only are they super fast and easy, they taste great. They are crunchy on the outside and soft and chewy on the inside, which is what I personally look for in a cookie. From start to finish including cooling time these cookies took approximately 25 minutes and made 2 dozen. The only thing I will do next time is use creamy peanut butter instead of crunchy. And trust me there will be a next time! Hope you enjoy these as much as we do. Happy eating!
Flourless Peanut Butter and Chocolate Chip Cookies
I found this recipe while looking for some quick easy cookies to whip together for the family. Not only are they quick and easy but they have no flour! I have a batch in the oven as I type and they smell amazing. I will let you all know how the verdict on the end product when they are done and have been sampled by the house!
- 1 cup super chunky peanut butter
- 1 cup (packed) golden brown sugar
- 1 large egg
- 1 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1 cup miniature semisweet chocolate chips (about 6 ounces)
Preheat oven to 350°F. Mix first 5 ingredients in medium bowl. Mix in chocolate chips. Using moistened hands, form generous 1 tablespoon dough for each cookie into ball. Arrange on 2 ungreased baking sheets, spacing 2 inches apart.
Bake cookies until puffed, golden on bottom and still soft to touch in center, about 12 minutes. Cool on sheets 5 minutes. Transfer to racks; cool completely.

Birthday Cake Details
The Matriach posted about the cakes from yesterday and I am adding the techi part to that.
“Tha Cake” was my first attempt at using the Kinnikinnick Angel food Cake Mix.
Factors impacting the turnout; did not use the Bundt pan, used two round pans, age of the mix ( have been meaning to get around to this for a while) and my impatience with making egg whites ” soft peaks”. I was feeling very rushed to make this cake on the day of the party so I am not willing to blame the cake mix itself.
The reactions; I had two slices, the Matriarch enjoyed a rather goodly sized portion, and my boys couldn’t wait to finish the last of the cake for breakfast. Overall it got a 3 out of 5 rating. It was ” good for being wheat free”. THAT is never my aim so I will be trying it again.
Birthday cake drama
Ok so the most important thing for a 4 year old is that Mom’s birthday MUST HAVE A CAKE AND PRESENTS! Bringing Mom a bottle of wine for example is not a GIFT as far as a 4 year old is concerned!!! Where were the balloons? Where were the presents with pretty wrap and bows?
Well the gifts we bombed at, but the cake – oh the cakes! Yes 2 of them. With 5 of the 12 members of the family wheat intolerant, 2 cakes were required!
The wheat free cake was wheat and dairy free. A white cake with a nutriwhip frosting (lactose free and casein free ) and lemon filling. It looked like a perfect cloud! The flowers on the top were amazing for an April splash of color. Unfortunately, the white cake was not the very best we can do. For some reason this time it was almost powdery tasting. The texture was almost sponge cake style. The flavour was awesome!
So for the 4 year old, Mom got 2 cakes with candles and a Happy Birthday song. But, failures we are – no gifts. LOL
