Wheat Free and Famished
In Calgary we had mastered the art of living Gluten/wheat free. We had our home and our cupboards and our recipe books all at the ready and did mighty well! ( The scale shows how well we were living!) Now we are in a small town in Northern BC and.. well.. I am HUNGRY and hearing the siren’s call of a perogie pizza from Boston Pizza!
Refocus!
Savalas Restaurant ( owned by Rebecca and Craig formerly of Teja’s) is going to be our haven. More than 3/4′s of their menu is ALREADY Celiac Friendly! Sauces are made from scratch and the couple are amazing people who are eager to help meet the needs of this growing group of people and are committed enough to help do research to do so. We are currently discussing and testing the viability of me adding some desserts to their menu including Toasted Coconut Cake, Rich Chocolate Cake and an Apple Cake with hot Caramel sauce. In the mean time, they are looking to add Rice Vermicilli to their substitution list for pastas and swapping out their soya sauce in their stir frys to meet the celiac requirements.
The Baking Cupboard at mom’s place is getting set up again in the breakfast nook. ( oh ya… ps. Mom I am setting up a baking shelf in the breakfast nook GRIN) This will enable us to not have to dig into boxes and/or invest moneys into foods we have already. Zanthum gum is expensive ( $15 for a yeast jar sized amount) and many of the other supplies are daunting when you are just getting set up. In the next week though we will be looking at getting our staples going again. Breads, loaves and cookies will be able to fill the kids lunch boxes.
Family Routines/Calendars are the final step in knowing who is where and when to cook for them. This will help us find the flow of who can do what when and what is needed. Making bread on painting day is not a good idea but we can make this work.
