Fettucine Alfredo – SUCCESS!!
Second attempt was the charm! Put on the Rice Fettucine noodles to cook… then start the sauce!
Basic Garlic White Sauce
Gluten-Free, Egg-free, Milk-Free
9 TBSP Margarine ( Whey Free)
2-3 crushed garlic clove
1 tsp Salt
Pan fry on MED heat.
6 TBSP Rice Flour
1.5 C Milk Alternative ( Almond Milk – Original)
1.5 C Water
Add to margarine and stir CONSTANTLY over medium heat until thickened. Salt and pepper to taste. Pour over drained pasta and garnish with parsley.
Hubby added lemon juice to his and loved it! The boys all broke up Mozzerella Flavored soy on theirs. AND ATE TWO HELPINGS!!!

Grocery Shopping RollerCoaster
So I found myself alone and with an hour to blow tonight. What better way to spend it than checking out a new Superstore location in the city and see what new hopes it carries. BLINK BLINK. Ya… well. Note to self. Do so first thing in the morning after a good cup of coffee. Those kind of excursions require either rum or some serious uppers!
Then.. like a gold ray of sunshine in the middle of a thunder storm… I stepped into THE AISLE.
The Aisle is the specialty foods section I guess. All Organic and such. I must say I am still annoyed with the Soy Cheese manfacturers ( see soap box entitled CASEINS!) but at least there were all the ones I had seen to date! Including the casein free one’s I had recently purchased. There were several of the decedent soy icecreams.. including the chocolate flake peanut butter one! MMMMMM and not only the CeliMixes.. but also the Kinnikinnak line in the freezer and on the shelves. Also another brand of …errr can’t remember the name.. will add it later.
Egg free ” mayo”.. and lots of other items redeamed my trip. Well worth it. NOW to start actually price checking! Off to eat kabobs and lettuce wraps .. with Praline Soy-ice cream for dessert.. maybe with whipped cream and melted Chocolate chips. ( milk free of course).

Meat Pockets – Taco Attempt #1
The new foods are hard enough on the budget that I also recognise the need for making left over’s palletable. It was the ” left over’s creation” night yesterday. Observant people would have noticed that my Apple Pie Crust recipie had the dough divided into 3 but we only used 2. Ahh HUH!..
1/3 of the Attempt #1 Crust. Rolled thin.
Left over seasoned hamburger. Browned.
Thin Sliced “Vegan Cheddar Cheese Flavored Soy”
Salsa
The goal was to make individual “pockets”. The most efficient way of doing so I found was to put the incredients in the middle of a long rectangle and then fold the two ends over to the middle and press the edges sealed.
Bake at 350′ for 15 min.
Glaze with margarine when out of the oven.
I sealed and put them in the fridge when they were cold and we Microwaved them for lunch today.
Roarke enjoyed them! BUT they were filling! Keep them SMALL. make the crust thinner… Brother said they tasted like heavy taco’s and got full half way through. Not because he didn’t like them.. jsut because they were filling. As I said… keep them small!
White Sauce – Attempt #1
My mom and my brother both groan about the loss of their Alfredo sauces. Being big pasta lovers, this new diet has taken a huge chunk of foods into the ” not so convenient to get” catagory. My Mission? To make a rockin white sauce.
Basic Garlic White Sauce

1.5 C Milk Alternative ( Almond Milk – Original)
1.5 C Water
Add to margarine and stir CONSTANTLY over medium heat until thickened.
Salmon Alfredo
1 Left over BBQ’d Salmon Fillet
1 tsp White Pepper
1 TBSP Dill
Crumble Salmon into sauce. Add seasoning and stir till heated. Serve Immediately.
Approx 4 Good sized servings. Recommend over Rice Fettucinne Noodles.

The sauce was not bad. It tasted fine, thickened lovely… the best we could compare it to was A No-Name SideKicks mix. It was ok.. but needs tweeking. Tommorrow Night’s Mission?
Fettucine Alfredo. Changes we are projecting? Double margarine and garlic, sauteing the garlic a bit more and picking up fresh parsley to add.

- 1C Shortening
- 1C Margarine ( whey free)
- 3 sm bananas
- 1tsp Baking Powder
- 1tsp Salt
- 2C White Rice Flour
- 2C Brown Rice Flour
- ½C Potato Flour
- 2C Chocolate Chunks (Milk free) – Dark chocolate is the best!
Drop by generous teaspoons on baking sheet. Bake at 325′ for 12-15 min Yeilds about 6 dozen

I got a 6 cookie rating from Gabe. ( that is how many he consumed before ditching the last one out of disinterest) I will get ratings from the boys when they get home from school!
Apple Pie – Attempt #1
What a better way to spend a Saturday afternoon that making Apple Pie. Keep in mind.. I am NOT a pie maker. Not that I would let that stop me from trying!
GlutenFree, Dairy Free, Egg Free (Optional).
Crust
2C Rice Flour
1/2C Brown Rice Flour
1/2C Potato Flour
3 tsp Zanthum Gum
3 tsp baking powder
3/4C Shortening
3 Eggs ( or Egg replacer)
3Tbsp Sugar
6 Tbsp Water
Filling – Blend together.
4 Apples. Thinly sliced.
1/4C Rice Flour
1/4C Wh Sugar
1/4C Brown Sugar
1tsp Zanthum Gum
1/2 tsp Cinnamon
1/2 tsp All Spice
Blend dry ingredients and cut in shortening to crumb state. Blend in liquid ingredients. Kneed for about 2 minutes on a rice floured surface. Divide into 3 equal balls.
Roll out one ball and line an 8″ Pie Plate. Fill with filling ( below). Roll out second ball and lay out on top of pie. Pinch edges and place in middle of 425′ oven. Bake 25 minutes.
Brush top of crust with margarine and sprinkle with sugar. Let cool.
