<p>I have become a dressing person but perhaps that isn&#8217;t the right term.  Stuffing Snob!  If I am going to eat it, it must be GOOD.  If not, the place on my plate could be put to much better use!   So how do I do it Gluten Free?   We have come up with Three &#8216;recipes&#8217;:</p>

<p>Breads have come a long way over the past 10 years and, if you are just getting started as Gluten Free, you have hit a perfect time to do so!  No more are the only<a href="http://wheatfreefamily.com/likes-links" target="_blank"> options </a>for breads those dried out, crumbly, cardboard tasting squares of tasteless white slices found in the freezer section.  ( Or worse!  NOT in the freezer but packed with little silicon packets! O.O)</p>
<p>UDI bread to the rescue!   This bread is well worth the $5 &#8211; $7 a loaf!  Is fantastic toasted AND NOT TOASTED!  Even holds up to, yes, <a title="Stuff It Stuffing Recipe" href="http://wheatfreefamily.com/?p=1414&amp;preview=true">STUFFING!</a>  Replacing your old Wonder bread with a loaf or two of Udi&#8217;s whole grain bread makes for an easy recipe conversion at the time of a hectic household meal.</p>
<h2>2) Wildly Rice<img class="alignright" src="http://www.gourmetsleuth.com/images/wildrice.jpg" alt="" width="115" height="100" /></h2>
<p>Go a little on the wild side with a mixture of white &amp; wild rice, apple juice, seasonings.  Let the rice soak for a bit to soak up some of the apple juice, and then stuffed it in the turkey with lots of room for expansion. The turkey cooked the rice then. Makes for a great alternative.</p>
<h2>3) Quinoa Walnut</h2>
<p><img class="alignleft" src="http://www.foodsubs.com/Photos/quinoa.jpg" alt="" width="101" height="83" />My personal favorite, thus far, though is our <a href="http://wheatfreefamily.com/archives/1222" target="_blank">Quinoa</a> stuffing.  This went over with not only the GF folk but even non-stuffing fans!  Cooked quinoa, dried cranberries, walnuts, dried cherries, diced onions, diced apples and LOTS of sage, thyme, rosemary, salt and pepper.  Keep in mind that quinoa absorbs flavor so be VERY generous with the seasonings!</p>

<p>I GRABBED up two boxes of each before I even looked at the prices&#8230;  before I even thought to pull out my camera and slam it up on<a target="_blank" href="http://www.facebook.com/pages/Wheatfree-Family/132519983450335" target="_blank"> facebook</a>!  I did correct that though, on the fly!<a href="http://wheatfreefamily.com/wp-content/uploads/2011/07/Chex_Rice-556.ashx_.jpeg"><img class="aligncenter size-medium wp-image-1278" title="Chex_Rice-556.ashx" src="http://wheatfreefamily.com/wp-content/uploads/2011/07/Chex_Rice-556.ashx_-300x109.jpg" alt="" width="300" height="109" /></a></p>
<p>What makes this a strange find?  The Location!  It wasn&#8217;t a health food store, a Safeway or Grocery ( by their true definition) .  No, it was ( don&#8217;t think less of me) Walmart!  in WILLIAM&#8217;S LAKE?!</p>
<p>Regardless, I bought it.  Paid the approx $5 a piece for 4 boxes and brought home my stash of golden sugary GLUTEN FREE carb cubes.  My children love me and I am suddenly eager for good old fashioned Nuts and Bolts.  Ahhhhhh&#8230;.  sodium licks!</p>

			<content:encoded><![CDATA[<p><a target="_blank" href="http://farm5.static.flickr.com/4100/4800513236_b053b2ca65_z.jpg"><img class="alignleft" style="margin-left: 10px; margin-right: 10px; margin-top: 5px; margin-bottom: 5px;" src="http://farm5.static.flickr.com/4100/4800513236_b053b2ca65_z.jpg" alt="" width="269" height="202" /></a>Stampede Days, Rodeo Weekends and with all of them comes THA MIDWAY!   Twisty turny paths of screams and jostling children crammed full of adults with their heads turned up mesmerized by the riotous gyrations of metal caged buckets on steel frames.  The excitement is high and the pack mentality surges though the yards.  While all this excitement is what draws some people to the over crowded theatrical presentation, to others it is the FOOD.</p>
<p><a target="_blank" href="http://farm5.static.flickr.com/4073/4799882457_334557c226.jpg"><img class="alignright" src="http://farm5.static.flickr.com/4073/4799882457_334557c226.jpg" alt="" width="350" height="263" /></a>Corndogs, salt water taffy, Stampede Burgers and deep fried Coke.  In the wholistic perspective you can&#8217;t really call it food but Mid Way Fare is what draws those who are no longer interested in the rides.  Deep fried, salted and sinfully sweet mouthfuls of eternally-bad-for-you AWESOMENESS.</p>
<p>Gluten Free Hell?   Damn Close!</p>
<p><a target="_blank" href="http://farm5.static.flickr.com/4074/4800526188_352c1de5f5_b.jpg"><img class="alignleft" style="margin-left: 10px; margin-right: 10px; margin-top: 5px; margin-bottom: 5px;" src="http://farm5.static.flickr.com/4074/4800526188_352c1de5f5_b.jpg" alt="" width="194" height="258" /></a>It and Christmas are when I get to pining over the gluten free losses.  I LOVE Corndogs and French Fries over soaked in Gravy.  The smells take me back &#8230;  righhhtttt&#8230; back to the time I are one of the Midway double cheese burgers with fried onions right before stepping into the caged ZIPPER.  * Covers Mouth Quickly*  Yup.  Should have listened to my mother!</p>
<p>Today my Teen is heading down to the Midway with cash in hand and excitement sparkles in his eyes.  The first year in the pack without a parental unit in sight.   Sighs.  He does his best as a teen to stay gluten free yet not be a lepper in his crowd.  I give him coodos for that.  Today will be a challenge.  I am dropping him off and Tha Baby and I will take  a walk around.  I plan on scoping out the eateries and seeing what Gluten Free options MIGHT exist there!</p>
